Steamed Pumpkin with Herbs
Ingredients
- 1 whole pumpkin (or get a precut one)
- 1 tbsp extra virgin olive oil
- 1/2 tsp sea salt (or more to taste)
- 1 tsp garam masala (or more to taste)
- 4 tbsp chopped herbs such as cilantro, chives, parsley, thyme etc.
- 1 clove crushed garlic or more as desired
- 1 tbsp lemon juice
Instructions
- Bring a pot with an inch of water to a boil, insert steamer basket.
- Peel and cube the pumpkin into one inch or smaller cubes
- Add pumpkin to steamer basket and cover. Steam for approximately 7 minutes, testing doneness with a fork or knife.
- While Pumpkin is steaming, chop the herbs, crush the garlic, juice the lemon and add all remaining ingredients to a bowl, whisking together.
- When the pumpkin is ready, immediately strain the water and add the hot pumpkin to the herb-spice mixture, tossing it until well coated. You can sprinkle a little bit of parmesan on top if desired. Enjoy!
